Just a quick post for snacking.
You can put anything on a tortilla. Here I’ve made a quesadilla pizza. I’ve added a thin layer of marinara sauce, mozzarella cheese and thinly sliced onions, peppers and mushrooms to a large flour tortilla. Then stuck it in the oven for melty crunchy goodness. That’s it!
Add your favorite toppings and bake it at 500 degree’s for about 5 minutes, depending on your oven. Then crank your oven to broil for a minute to get the crispy edges and bubbly cheese. Make sure you keep your eye on it though, it brown’s quickly.
This is a great snack for after school or even the superbowl. Once the adults slice the veggies, the kids can help assemble. You’ll want to make sure you have plenty of the ingredients on hand because they go fast.
Other toppings I like are artichoke and tomato with feta cheese and beans, jalapenos and tomatoes with jack cheese. You can use canned beans that are rinsed and drained well. Don’t be afraid to experiment with lots of different toppings, just keep them light or you’ll end up with a soggy mess.
