This is a recipe I came up with in the planning of a four day car camping trip. I chose to use grits here instead of corn tortillas because tortillas can be perishable and I wasn’t using them for anything else, so I didn’t want to bring them. Also, instant grits are light weight, fit in the smallest of spaces and mimic the corn flavor from the tortilla. I didn’t bring along any additional seasonings for my beans because I knew the salsa would give them all of the flavor they needed. They turned out really delicious and super flavorful.
This camp breakfast is easy and quick to make. It’s loaded with protein, really delicious and will keep you full until lunch.
As a note, I’ve listed the equipment needed to make this meal. I find that when planning a menu it’s a good idea to keep track of what equipment you’ll need so that you can plan to use the same equipment for your other meals and don’t bring anything unnecessarily.
- 3 packages of instant grits
- 1 14 oz. can black beans
- 1/2 jar salsa (about 1 cup)
- salt and pepper packets
- vegetable oil
- 4 extra large eggs
- ½ cup of shredded cheese
- hot sauce
Equipment needed for this meal
- 2 bowls
- 2 forks
- kettle or pan for boiling water
- 2 well seasoned cast iron skillets, one about 5-6″ across, the other 8″ across
- spoon for salsa/beans/grits
- spatula for cooking eggs
First you want to get your water on the fire to boil. You’ll need as much water as the instant grits call for, plus a bit more in case your grits are to thick. Separate the grits between two bowls and set aside.
In the smaller cast iron skillet add the can of beans with juice, the salsa and salt and pepper to taste. Place this on the fire grate over the medium to hot area. Let simmer for about 15 minutes. Meanwhile, take the larger skillet and place on the fire grate over a medium heat area, add a drizzle of oil and let it heat up. Once heated well, add your eggs and cook to your liking (I did an over hard here).
Once your beans are bubbly and your eggs are cooked, add hot water to the grits until you reach the consistency you like. Top the grits with a little shredded cheese, then the egg, black beans and more cheese. Drizzle with hot sauce and enjoy!
