Combine exhausted after a long day and haven’t been to the grocery store in awhile, and chances are there’s going to be a struggle when it comes to figuring out what’s for dinner. Well, that’s where I was at today when I got home from work. I had next to nothing in the way of food in my kitchen. I had no desire to cook. I nearly had no desire eat. But I was hungry and I had to eat.
All I had to work with was a half a pint of cherry tomatoes that were getting close to ruin, a half a box of spaghetti and some frozen peas. Combine that with garlic, olive oil and some Parmesan cheese (which I always have on hand) and voila! Now, it might not look like much but it tasted great! This is enough for one pretty hungry person or two with a salad on the side. Here’s what you do.
- 1/4 lb. Whole Grain Spaghetti
- 2 tbsp. Olive Oil, plus 2 tbsp. Olive Oil
- 1/2 pint Cherry Tomatoes
- 2 Cloves Garlic, minced
- 1/2 cup Frozen Peas
- Freshly Ground Pepper
- Freshly Ground Sea Salt
- A generous sprinkle of Parmesan cheese
Boil your pasta according to the package directions. Once you’ve drained your pasta, leave it in the strainer while you finish the rest of the meal.
Heat the pot you used to boil the pasta over medium high heat. Add two tablespoons of olive oil and the cherry tomatoes. Cook the tomatoes until they begin to blister and burst, stirring constantly.
Add the minced garlic and cook for another 30 seconds or so over medium high heat until it just begins to caramelize. Add the frozen peas and cook for another minute or so until the peas are just thawed. Turn off the heat and add the pasta back to the pot, along with a couple of grinds of salt and pepper, Parmesan cheese and the remaining olive oil. Toss everything together well and enjoy.
