School starts tomorrow. I’ve been going a bit crazy for the last month or so trying to get things done before school starts. Cleaning the house, cooking as much as possible, sleeping. Once school starts life is going to get a bit full. I won’t have a lot of time to do those things that […]
I just love all of the flavors in a Greek salad. The crisp sweetness of the peppers, cucumbers, red onion and tomatoes as well as the tangy, salty olives and creamy feta cheese are a joy for the taste buds. Not to mention the deliciousness of a good garlicky, lemony Greek dressing with fresh oregano.
Combine exhausted after a long day and haven’t been to the grocery store in awhile, and chances are there’s going to be a struggle when it comes to figuring out what’s for dinner. Well, that’s where I was at today when I got home from work. I had next to nothing in the way of […]
I am all about easy one pot meals, especially on a weeknight. And though I am pretty good at just throwing ingredients together and coming up with something, I do like to have some go to recipes that save me when my brain is too tired to function. This vegan creole stew combines a ton […]
This is really a paired down version of my basic chili recipe, but done over a campfire. Now I know that campfire chili is nothing new, but I didn’t find many campfire chili recipes out there with fresh vegetables and no meat. So I post this recipe for two reasons, the first is to add […]
I often make salads like this. I take a few ingredients I have in the fridge, mix them together and pack them, along with some salad greens, for my work-day lunch. This particular salad is destined to become a pasta salad, but could be happily enjoyed as is. The reason I make salads like this […]
Yum! I made a big pot of broccoli rabe stewed with onions. My intention was have it with some israeli cous cous for dinner. But when I saw how much I had made, I decided to throw together some Broccoli Rabe Calzones as well, and throw them in the freezer for later. It’s really easy […]
This is my basic recipe for most greens, whether we’re talking broccoli rabe, kale, collards or any other hardy green. I absolutely love broccoli rabe though, so I make it the most. Unfortunately I didn’t get a photo of this, but promise to next time I make it. For an idea of how it looks, […]
This one really turned out pretty. And tasty too! I love coming up with new flavor combinations for different grains. I must have a dozen for wheatberries alone. This one is tangy and fresh and goes perfectly with BBQ Tofu. The tofu was a bit of a challenge, mostly because I hadn’t done it this […]
Apparently my mouth and my mind are not communicating well because my mind has some sort of determination to like it, even though I’ve tried it several times without success.
